The Hen of the Woods – for thousands of years, this mushroom has been prized for its medicinal and culinary value in China and Japan. “Maitake,” the Japanese name for the hen of the woods, means “dancing mushroom.”

Dried mushrooms should be soaked for 30 minutes in water, saving the liquid for present or future recipes.
We decided to dry our own maitake mushrooms rather than buy in bulk not knowing where they originated.
